Home Cooking Take It - Bake It in Redway has new owners. Laura Eldridge and her husband, Martin, are buying the Redway establishment from Jo and Stan Khougaz.
The Garde mange (a French term for keeper of the food referring to a cold kitchen where food is prepared to be taken home and cooked) started out as a Papa Murphy’s franchise take-and-bake style pizza place in Garberville in 1997.
”When we moved to Southern Humboldt from Los Angeles,” Jo Khougaz said, “we didn’t know a single person. So not only did buying Papa Murphy’s afford us a way to make a living, it afforded us a way to get to know people in the community.”
In 2006, the Khougazes decided to become fully owned, switched to their own recipes and changed the name to Home Cooking Take and Bake Pizza. Two years ago they moved the establishment to the current location at 47 Briceland Road in Redway.
”This fills an important niche in the community,” said Jo Khougaz.
The Khougazes are ready to retire and have sold the establishment to the Eldridges, who have plenty of restaurant experience since they have owned the Eel River Cafe in Garberville for the last nine years.
The Eel River Cafe was recently purchased by local resident Moises Lopez and his family.
Laura Eldridge has been working with Stan Khougaz for the last two months so that a seamless transition takes place.
Eldridge said her family will be involved in the food preparation. She explained the family is interested in the farm-to-table concept. Their son, Jesse, age 24, who graduated from the Culinary Institute of America at Greystone in Napa Valley is exploring the possibility of buying an organic farm and wants to incorporate fresh organic produce in the menu. There is the possibility that they will branch out beyond pizzas and have fresh seasonal organic pies, salads and maybe some raw food since daughter, Lindsay, age 21, is vegan and enjoys making special food.
Eldridge said she has enjoyed Home Cooking pizzas over the years. She is excited to be in a position to meet the community she is preparing food for now, since at the Eel River Cafe she was in the back cooking all the time.
She said she is grateful to the community for prayers and support during the time of transition. The Khuogazes are grateful for all the community support they have gotten over the years, too.
